This year our plans for Christmas are kinda different. It's just Jamie and I on Christmas Eve before Church. It is the first year that we will attend Christmas Eve Service at First Baptist Opelika as well. Church Service at 6 poses a Christmas Eve dinner dilemma as we won't be home from church until 7:30 and I am not a fan of cooking that late or eating that late for that matter. After some deep thought I decided that we would have a late Christmas Eve lunch and then just snack when we get home from church. After a morning in the kitchen with breakfast, 3 batches of chex mix and preparations for tomorrow, I was on the search for something easy and I came across a Pioneer Woman recipe for Bow tie Chicken Pasta! Sometime warm, rich and delicious for this chilly day and alittle out of the box for Christmas! But I am also assuming everyone will have their fair share of Turkey and Beef tomorrow! *this is an adaptation of Ree's recipe*
For this recipe I am using a cast iron skillet. First you want to get your skillet hot and melt 1/2 stick of butter.
Then add your diced chicken.
Sauté until done, remove from pan and set aside. Next add 2 cloves of minced garlic and 1 tablespoon of butter.
Then deglaze the pan with 1 cup of white wine. (Santa is fascinated with the deglazing)
Let this mixture bubble and thicken for about 3-4 minutes. Then add 1 cup of half and half and 1/8 cup of heavy cream. It's the holidays right? We can indulge!
Stir this mixture until combined and let bubble and thicken for 5 minutes.
Then add 1 cup of shaved/grated Parmesan cheese. And continue to stir. Then add salt and pepper to taste. This is what your sauce will look like.
While you have been making the sauce, you should be boiling your bow tie pasta. When the pasta has about 2 minutes left throw in some broccoli to Blanche. Then drain and add pasta/broccoli to the sauce.
Toss the pasta around and the add the chicken and toss. Let the chicken warm back up! Sprinkle alittle more Parmesan on top and it's ready to serve.
There ya go! Easy and took about 40 minutes! It was a great break to baking and cleaning!
